SPAGHETTI with TOMATO, PRAWNS and fresh PESTO

Today I will share with you a fast quick and delicious recipe; I did it yesterday for dinner and it was a success…I even manage to impress the wife!!
SPAGHETTI with TOMATO, PRAWNS and fresh PESTO.
For 4 people you will need:
1. Spaghetti 500g – I recommend De Cecco £1.70
2. Cherry tomatoes 250g – I suggest Natoora Sicilian Datterini Vine Tomatoes £ 2.50
3. Fresh basil Pesto sauce 145g – try Fresh Stir-In Basil Pesto £ 2.19
4. Fresh king prawns 150g – I like Raw King Prawns £ 2.74
5. Extra virgin olive oil, salt, garlic (1 clove) and pepper as needed.
Take a sauce pan of about 30 cm of diameter, pour some oil, one clove of garlic peeled salt and pepper.
When the oil starts to fry put in the pan the tomatoes that you have previously washed and chopped in two. I know that the tomatoes are already small and that chopping them seems stupid, but this will help all the juices and the flavour to come out beautifully when they come in contact with the hot oil in the pan.
After 3 or 4 minutes the tomatoes should have realised all the flavour and now you will have in the pan a lovely reddish sauce.
Now put the prawns in the pan. Make sure not to overcook them! I will share a trick to avoid that: when the prawns get a lively pinkish colour, they are cooked to perfection.
At this point you are ready to pour into the pan the fresh basil pesto. Once you done that stir and mix your sauce so that it amalgamates beautifully. Use your nose!!! The smell of the basil by now will be blended with the one of the tomatoes that being cooked for few minutes now, should have lost their distinctive hint of acid in favour to a voluptuous Mediterranean sweet smell of tomato sauce.
In the meantime you have had your spaghetti put in abundant salted boiling water. Be careful with the cooking time for the spaghetti as Socrates taught us: “Not too much, nor too little”. I advise you to follow the guidelines published on the packaging.
Put the cooked spaghetti in the pan mix everything very well, let it rest on the hob for a minute while you do the mixing and…. The job is done. Enjoy a beautiful Mediterranean dish with who you love for just over £9.00
